In-restaurant or delivered to your door Xi'an Biang Biang bangs. Street food and local cuisine from the city of Xi'an. The Biang Biang bit? Well that's the name for these thick 'belt noodles', apparently derived from the sound made when the chef pulls the noodles through the dough and slaps them on the table. Imagine yourself in the pasta aisle of Tesco, it's 2005, you're a mum of three. You discover tagliatelle next to the spaghetti. All of a sudden you're Marco Pierre-White. Your middle-class spawn are loving it. "Mama, the sauce clings to this wide spaghetti so much better than the thin stuff". If you times that by 1000, add in Xi'an's special sauce, you've arrived at the Biang Biang noodle. Biang Baing, you're dead. Top tip: I'm yet to find a better hangover cure than the black fungus cold starter followed by the BiangBiang noodles with beef in special sauce. Maybe accompanied by a beer, if you think you're hard enough.
